Why roast coffee in small batches?
Short answer
6eight roasts coffee in small 8 lb batches so the roaster can watch, hear, and smell the coffee closely from start to finish.
Small-batch roasting gives the roaster more control over the arc of the batch. The coffee moves from green to yellow, through browning, into first crack, and finally into the drop. At 8 lbs, those changes are easier to track in real time.
That matters because specialty coffee is not only about buying better beans. It is also about treating those beans carefully once they reach the roaster.
