Every bean we roast is specialty grade — cupped and scored well above the industry standard before it's ever roasted, which is what actually separates a good cup from an average one. We keep every batch small enough to watch it develop start to finish, and stock our shelves with goods made by human trafficking survivors through the maker partners we trust.

Milk chocolate, plums, brown sugar, dried cherries. Sourced from over 800 women farmers across Huehuetenango.
Berries, dried fruit, citrus, floral. Washed process, light roast. Grown at 2,300 msl by producer Benti Neka.
Citric, toffee, herb, chocolate. Fully washed, light-medium roast from producers Silvestre Vasquez & Joel Lopez.
After the beans arrive from remarkable places, every batch moves through the same arc right here in Zeeland. At 8 lbs, we can hear first crack clearly and pull the moment a bean is ready — not a moment before or after.
Beans dry out and shift from grassy green to pale straw.
Sugars brown the bean and build the base flavor — bread crust, toasted grain.
An audible snap as the bean opens. Most roasts are pulled within 90 seconds of this.
Beans hit the cooling tray immediately, logged by batch, weight, and time.
That's the limit of our drum, kept small on purpose. Fewer beans means even heat all the way through, so nothing scorches on the outside while the inside stays under-roasted — and it means we can hear and smell the exact moment to pull it, not just guess. A bigger roaster means bigger batches, longer queues, and beans that sit around before they're brewed. Your 6/8 beans are fresh and roasted to perfection!

We roast randomly, but frequently. Swing by any time and you might catch a batch coming out of the drum.
