Inside 6eight Coffee Shop & Roastery
6eight Coffee Shop & Roastery
Zeeland, Michigan · Since 2012

Specialty grade, ethically sourced coffee, roasted eight pounds at a time.

6eight is a specialty coffee shop, micro-roastery, and fair trade boutique. Every bean we roast is specialty grade — cupped and scored well above the industry standard before it's ever roasted, which is what actually separates a good cup from an average one. We keep every batch small enough to watch it develop start to finish, and stock our shelves with goods made by human trafficking survivors through the maker partners we trust.

Why ethically sourced

We've put people first since day one.

Ethically sourced means we work with reputable partners who make sure every farmer behind our coffee is treated fairly and paid what their work is actually worth — not just whatever the commodity market says it's worth.

Small batches make that honesty possible. When you're only ever roasting 8 lbs at a time, you can afford to buy the lot that's actually right, instead of buying in bulk to hit a price point.

Guatemala · Huehuetenango

Milk chocolate, plums, brown sugar, dried cherries. Sourced from over 800 women farmers across Huehuetenango.

Ethiopia · West Guji

Berries, dried fruit, citrus, floral. Washed process, light roast. Grown at 2,300 msl by producer Benti Neka.

Honduras · Western Region

Citric, toffee, herb, chocolate. Fully washed, light-medium roast from producers Silvestre Vasquez & Joel Lopez.

The Roast

Roasted in house, eight pounds at a time.

After the beans arrive from remarkable places, every batch moves through the same arc right here in Zeeland. At 8 lbs, we can hear first crack clearly and pull the moment a bean is ready — not a moment before or after.

1

Green to Yellow

Beans dry out and shift from grassy green to pale straw.

2

Maillard

Sugars brown the bean and build the base flavor — bread crust, toasted grain.

3

First Crack

An audible snap as the bean opens. Most roasts are pulled within 90 seconds of this.

4

Drop

Beans hit the cooling tray immediately, logged by batch, weight, and time.

8lb

That's the limit of our drum, kept small on purpose. Fewer beans means even heat all the way through, so nothing scorches on the outside while the inside stays under-roasted — and it means we can hear and smell the exact moment to pull it, not just guess. A bigger roaster means bigger batches, longer queues, and beans that sit around before they're brewed. Your 6/8 beans are fresh and roasted to perfection!

Roasted Behind The Bar

Come watch a batch drop.

The roaster sits right behind the bar — if you're here between drops, you'll smell first crack before you see it.

We roast randomly, but frequently. Swing by any time and you might catch a batch coming out of the drum.

The Boutique

Goods made by survivors, chosen the same way we choose our coffee.

Alongside the roastery, we stock a small boutique of fair trade goods made by human trafficking survivors through the artisan cooperatives we partner with — every purchase supports their continued work and independence.
